Being a wife and mother and well just a busy lady in my years lol. I am convinced that if you aren't using a crockpot then you better start asap lol. What a easy way to manage your day stress free and of course less dishes, less mess.Then what women isin't much happier in life!
I have enclosed a couple of recipes of two of my favorite dishes for that crockpot of yours. I have found in my life that anything that gets me to always think on the POSITIVE SIDE, makes my life that much more WONDERFUL!!!!!! Aren't YOU that much more wonderful too! SUNDAY DINNER ROAST WITH VEGETABLES!
1lb. baby carrots Salt and pepper
1 onion, chopped 3-to4-lb. boneless beef roast,see note below!
8 potatoes, peeled and chopped 2 tsp. beef bouillon
Place vegetables in slow-cooker, I love using the crockpot liners you can buy to line your slow-cooker at first. Sprinkle salt and pepper. Pour 1/2 C. Water around sides. Place roast on vegetables. Rub bouillon on roast. Tie up bag with a bread tie. Cook on high 4-5 hours or low 7-8 hours which is what I love to cook on. Remove roast. Allow to cool for 10 min. slice roast and serve. YUMMY!
* Note: The best kind of roast to use in a slow cooker are the cheapest kinds, like a brisket or chuck. so here is a total money saver.
Delicious Beef Gravy
Stir 1/4 C. flour into meat drippings until well blended. Slowly stir in 2C. water. Cook uncovered, on high, stirring occasionally until gravy thickens, or transfer gravy to a saucepan and cook it on the stove. I can attest to the fact that this gravy really does WORK!!!!!!!! Also just a hit that my mother has always done with her gravy is she uses half water and half milk. YUMMY!
ENCHILADA CASSEROLE
2 lb. ground beef 1 small can sliced olives
1 onion, chopped 1 large can enchilada sauce, I use mild
1 clove garlic, minced 1 C. sour cream
9 corn tortillas 2 C. lettuce, finely cut
1 can refried beans 2 tomatoes, diced
2 C, grated Colby Jack Cheese and Cheddar Cheese Salsa and choice of toppings
Brown meat with salt and pepper to taste. Drain, and I would rinse the beef. Mix with onions and garlic. Line your slow cooker with a purchased liner. Tear tortillas into smaller pieces. In slow-cooker, layer tortillas, refried beans, ground beef, 1/2C. cheese, olives, and enchilada sauce. Repeat for 3 layers total. Top with remaining cheese. Seal your liner with a bread tie and cover. Cook on hight 3-4 hours or low 6-8 hours. Serve with sour cream, lettuce, diced tomatoes, salsa and choice of toppings. YUMMY!!!
